Idea projektu

Projekt interiérového designu restaurace navazuje na celkový koncept budovy z dřívějšího studentského projektu. Jedná se o budovu s dvojitou fasádou inspirovanou tradičními skleníky. Fasáda je stále zelená po celý rok, s produkcí plodin. Design restaurace z tohoto konceptu vychází a snaží se vnést zeleň i mezi návštěvníky. Hlavním motivem je zeleň v podobě zelených stěn a zeleného podhledu. Jeho konstrukce je samostatně zpracována. Návštěvník proto může obdivovat zeleninu pěstovanou ve fasádě i stromy a rostliny rostoucí přímo kolem něj. The interior design project of the restaurant follows the overall concept of the building from an earlier student project. It is a double-facade building inspired by traditional greenhouses. The facade is still green all year round, with crop production. The design of the restaurant is based on this concept and tries to bring greenery to the visitors. The main motive is greenery in the form of green walls and green soffit. Its construction is individually processed. The visitor can therefore admire the vegetables grown in the facade as well as the trees and plants growing around him.

Popis projektu

Základní koncept budovy se inspiruje typickými skleníky. Jejich konstrukce je použita v podobě dvojité fasády. Mezi vnitřním a vnějším pláštěm se nachází prostor, kde rostou květiny v boxech, které jsou součástí konstrukce. Fasáda je provětrávána zespoda a shora, proto zde vzniká příjemné klima, které zajišťuje, že se v létě celá budova nepřehřívá a v zimě naopak budovu zahřívá. Dalším zásadním principem je samotná produkce budovy. Na celé ploše fasády se dají pěstovat plodiny, které se dají později uvnitř budovy zkonzumovat či koupit. Produkci fasády podporuje hydroponické pěstování v šestém patře. Na střeše se nachází kolektor dešťové vody pokrývající potřebu zavlažování. Parter budovy je otevřený s možností konání sezonních trhů, dvě patra nad ním obsahují kryté tržiště, které může fungovat celý rok. Dále je zde restaurace, která využívá lokální plodiny. Šesté patro je věnováno hydroponickému pěstování, v posledním sedmém se nachází pronajímatelné zahrádky, kde je možné pěstovat vlastní plodiny. Koncept restaurace navazuje na koncept celé budovy a opět se inspiruje skleníkem. Návštěvníci mohou nejen obdivovat plodiny rostoucí za skleněnou stěnou, ale i zeleň, která se nachází kolem nich. Hlavním prvkem jsou v obou patrech nacházející se zelené stěny a také podhled s tropickými rostlinami. Návštěvník je tedy zelení obklopen ze všech stran. V centrálním prostoru druhého patra restaurace najdeme „bazének“ s tropickými křovinami a stromy navazující na centrální bazénky v klasických sklenících. The basic concept of the building is inspired by typical greenhouses. Their construction is used in the form of double facade. Between the inner and outer shells there is a space where flowers grow in boxes that are part of the structure. The facade is ventilated from below and from above, so there is a pleasant climate, which ensures that in summer the whole building does not overheat and in winter the building warms up. Another fundamental principle is the production of the building itself. The whole area of ​​the facade can be used to grow crops, which can later be consumed or purchased inside the building. Facade production is supported by hydroponic cultivation on the sixth floor. On the roof is a rainwater collector covering the need for irrigation. The ground floor of the building is open with the possibility of holding seasonal markets, with two floors above it containing a covered marketplace that can run all year round. Furthermore, there is a restaurant that uses local crop. The sixth floor is dedicated to hydroponic cultivation, in the last seventh there are rentable gardens where you can grow your own crops. The concept of the restaurant follows the concept of the entire building and is again inspired by the greenhouse. Visitors can not only admire the crops growing behind the glass wall, but also the greenery around them. The main element is the green walls on both floors and the ceiling with tropical plants. The visitor is therefore surrounded by greenery from of all parties. In the central area of ​​the second floor of the restaurant we find a “pool” with tropical shrubbery and downstream trees for central pools in classic greenhouses.

Technické informace

Zajímavým a ústředním prvkem celého interiéru restaurace je zelený podhled s menšími tropickými a pokojovými květinami. Na zelený podhled navazují zelené stěny v obou patrech restaurace a také menší zelená stěna na přední straně převýšeného prostoru v jižní části. Pro interiérové řešení zelených prvků je nejvhodnější zvolit princip pěstování pomocí hydroponie. Hydroponické pěstování je princip růstu rostlin bez potřeby substrátu ve formě hlíny. Substrát zpravidla tvoří keramzit či jiné anorganické částečky. Přísun živin do rostlin je zajištěn pomocí hydroponického roztoku. Jeho přísun a složení se dá regulovat, proto je možné rostliny velmi kvalitně zásobovat. Tento princip má mnoho výhod. Pro umístění do restauračních a jiných provozů s důrazem na zvýšenou hygienu prostředí je určitě výraznou výhodou sterilita celého procesu pěstování rostlin díky nahrazení hlíny substrátem s roztokem. Další výhodou je, že rostliny díky kvalitnímu přísunu živin rostou mnohem rychleji, než by rostly při klasickém růstu v květináči v hlíně. Efektu spojené zeleně se tak dá docílit mnohem rychleji. Rostliny ovšem budou vysazovány již vzrostlé. Hydroponické pěstování má opět několik možných konstrukčních principů, které se hlavně uplatňují na stěny, zde je zvolena hydroponie na geotextilii. Znamená to, že substrát s keramzitem a živným roztokem obklopuje geotextilie, která zabraňuje vypadnutí substrátu i rostlin. V geotextilii jsou díry, skrz které mohou rostliny růst do prostoru. Stejný konstrukční princip je použit i v případě podhledu. Rostliny vyžadují kromě stálého přísunu živin a světla také občasnou péči. Minimálně ve formě očištění listů či zastřihnutí, v horším případě pak výměny celé rostliny. Proto je koncept podhledu vymyšlen tak, aby každá z modulárních částí byla dostupná k údržbě. Modul velikosti 2x2m je možné díky pohyblivým rámům svěsit dolů, otočit rostliny směrem vzhůru a provést snadnou úpravu zeleně. Každý modul je zavěšen na nerezovém rámu, má čtyři pohyblivé rámy směrem dolu, dva z nich jsou odepínací tak, aby bylo možné celý modul otočit. Po dokončení údržby se modul jednoduše opět vrátí do výchozí polohy. An interesting and central element of the whole restaurant interior is a green ceiling with smaller tropical and indoor flowers. For interior design of green elements is best to choose the principle of cultivation using hydroponics. Hydroponic cultivation is the principle of plant growth without the need for a substrate in the form of clay. Typically, the substrate is comprised of expanded clay or other inorganic particles. The supply of nutrients to plants is ensured by a hydroponic solution. Its supply and composition can be regulated, so it is possible to supply plants with high quality. This principle has many advantages. The sterility of the whole plant growing process by replacing the clay with a substrate with a solution is certainly a significant advantage for placing in restaurants and other operations with an emphasis on increased environmental hygiene. Another advantage is that the plants, thanks to a good supply of nutrients, grow much faster than they would grow in a classical pot in clay. Effect connected greenery this can be achieved much faster. However, the plants will be planted already grown. Hydroponic cultivation again has several possible design principles, which are mainly applied to walls, here is chosen hydroponics on geotextile. This means that the substrate with keramzite and the nutrient solution surrounds the geotextile, which prevents the substrate and plants from falling out. There are holes in the geotextile through which plants can grow into space. The same design principle is applied to the ceiling. Plants require, besides a constant supply of nutrients and light, occasional care. At least in the form of leaf cleaning or trimming, in the worst case, replacement of the whole plant. Therefore, the ceiling concept is designed so that each of the modular parts is available for maintenance. Thanks to the movable frames, the 2x2m module can be hung down, the plants can be turned upwards for easy green adjustment. Each module is hung on a stainless steel frame, has four movable frames down, two of which are detachable so that the entire module can be rotated. After maintenance is completed the module simply returns to its initial position.
